Traditional Cypriot Flaounes
Enjoy traditional Cypriot flaounes filled with a rich mixture of cheese, eggs and fresh herbs. Their unique balance of savory and slightly sweet flavors makes them a true Easter favorite.
A classic recipe, perfect for sharing during festive family moments.
Ingredients (8–10 flaounes):
For the filling:
- 1 kg grated halloumi (a mix of fresh and aged)
- 8 eggs
- 100 g fine semolina
- 1 tsp baking powder
- Fresh mint, finely chopped
- Raisins (optional)
- Freshly ground black pepper
For the dough:
- 1 kg flour
- 200 ml milk
- 100 ml olive oil
- 1 packet dry yeast
- 1 pinch salt
Method:
- Prepare the filling
Combine all the filling ingredients in a bowl. Cover and allow the mixture to rest for 1–2 hours, or ideally overnight, for better flavor and consistency.
- Prepare the dough
Mix all the dough ingredients and knead until soft and smooth. Cover and let it rise for about 1 hour, until slightly puffed.
- Shape the flaounes
Roll the dough into small discs. Lightly moisten them and coat with sesame seeds. Place filling in the center and fold into a square shape, leaving the filling slightly exposed.
- Bake
Brush with egg wash and bake at 180°C for 40–45 minutes, until golden brown.
Tips:
- The filling should be firm, not watery, to prevent the flaounes from opening.
- Avoid overfilling, as this can cause them to break during baking.
- Fresh mint is key for achieving the authentic traditional flavor.
- Serve warm or at room temperature and enjoy.
